If there's one truly iconic gourmet restaurant in the Ardennes , it's L'Eau Vive ! Housed in a former 17th-century mill in Arbre , near Profondeville , it offers refined cuisine that has earned it two Michelin stars and a score of 17.5/20 in the Gault&Millau guide . Chef and owner Pierre Résimont showcases classic flavors with a precise twist , alongside his wife Anne , who manages the front of house .

The setting follows the course of the river, with a terrace surrounded by greenery and the sound of a waterfall in the background. Signature dishes include a crispy pie filled with pigeon breast and foie gras , accompanied by cauliflower condiments (miso, curry) and a black truffle jus . Another option is a poached turbot fillet with shellfish ceviche , crispy buckwheat , and yuzu beurre blanc . The cheese trolley offers a diverse selection, guided by sommelier Rémy Gilon and his extensive wine list .

L'Eau Vive received the Dessert of the Year award in 2018 and the award for best terrace in 2011 from Gault&Millau . The menus change with the seasons , emphasizing fresh produce .
